here’s what i’m covering in today’s letter in case you’re short on time :)

- ultra simple meal prep, my non-negotiables lately
- 2 heavenly recipes: my miracle sesame noodles and an erewhon dupe cabbage that can last in the fridge but never does!!
- a soft reset
- client inspo
- etc etc etc! <3<3<3

hi hello ♥️ i've been deep in something, something for you actually!! ;) something that’s coming in a month or so ;). it’s been a head down tunnel vision season and it’s been making me crave things ultra simple. i want food to be tasty but not even remotely fussy or time consuming. stuff that sits quietly in the fridge all week and makes things a little easier and better (bless!!). so i’ve come back to the basics, the stuff that’s so simple it’s easy to forget and that’s what’s going down today. my non-negotiables currently: ♥️♥️♥️♥️♥️♥️♥️♥️

get 2 boxes of eggs, one box gets hardboiled pretty much immediately upon arrival: i made this a non-negotiable for myself two weeks ago, because having a hard boiled egg makes me feel like a maternal figure did it for me. when i’m head down there’s a part of me that really craves being taken care of, and grabbing something from a tupperware rather than a package really helps. i go back and forth between wanting jammy vs properly hard boiled and have landed on just barely hardboiled - which means adding the eggs to a pot with water, covering and turning up the heat to medium-high and cooking at a boil for 10 minutes. i use and loveeee this pot which is cute enough to sit out on the burner :)

these are 2 random little snacks i have a lot that take basically zero effort but make me feel genuinely cared for (also these are the plates, i’m obsessed):

oh also, i found a hack that is kinda life changing for getting the shells off nicely, this has been working like a charm!

slow roast a bunch of sweet potatoes while you do something else: these are just so nice to have ready to go. since they do take an hour, i like popping them in before I get on hour long meeting and that way i always have.

i’ve been doing the below method for years which was introduced to me originally by Nicole Berrie!!

  1. preheat your oven to 425 degrees

  2. wrap the sweet potatoes in parchment paper like candies, with no air coming in and place in a dutch oven or dish (see below!)

  3. cook for 1 - 1.5 hrs until ultra goey

  4. remove from oven and remove paper when cool!

big batch of my erewhon dupe cabbage!!: recipe below in the recipe section :). this has also changed the game for me because it can chill for a week, it never ever lasts that long but nice that it could! here’s mine and how i paired it at the whon lol:

do one thing with your hands that has no point: i recently got these weighted sensory balls for oliver but have fallen in loveeee with them for tactile input. doodling is so nice too, and anything where the sensory experience of using your hands is the point without an outcome.

make a big batch of green goddess and slice veg for dipping: i love this one:
